Vegetarian or Carnivore Skillet Lasagna

Nothing like a quick fix meal and even better a 1 pot quick fix meal! This is a winner, inspired by Pinterest. Altered to a vegetarian version by using Morning Star Farms Grillers and adding baby spinach.

Meat is pretty non existent in my weekly meals, has been for a while now. Not as hard might think once you really take a look at the food market. Pay attention to where your food is coming from, MEAT ESPECIALLY! 

I do crave a burger once in a blue moon especially for “In N Out”Burger! Unfortunately it is not a couple miles away anymore… I miss California for the little things, one being “In N’ Out”.

Back  to this quick take on a classic, in a skillet, have to say was definitely worth the time.  Give it a try be it meat or meatless filled!

Ingredients:

  • 1 large diced onion
  • 2-3 garlic cloves, minced
  • 1 bag Morning Star Farms Grillers crumbles (for  carnivores 1/2 pound beef or turkey).
  • (about 8-10) lasagna noodles, broken into 1/4ths
  • 1 (10 oz) can Ro-tel diced tomatoes (or regular diced tomatoes)
  • 1 cup tomato sauce
  • 2 cups water
  • 4-5 large fresh basil leaves
  • salt and pepper to taste, about 1/2 teaspoon each, also crushed red pepper flakes
  • 2 cups Baby Spinach
  • 1 cup mozzarella cheese, shredded
  • 4 oz fresh mozzarella pearls (I used mozzarella sticks, and cut rounds)

Directions:

  1. In a large skillet, saute onion over medium-high heat stirring occasionally until browned. Add in crumbles.  Stir in the minced garlic and cook for one minute until fragrant.
  2. Blend sauce, water, Ro-Tel diced tomatoes, basil, salt and pepper, for extra kick I added crushed red pepper flakes. Evenly add the lasagna pieces, tomato sauce, spinach. Stir gently to combine.
  3. Cover and simmer for 30-35 minutes or until noodles are al dente over medium to medium-low heat. Shake the skillet occasionally to evenly distribute the noodles as they soften. Remove from heat and stir in cheese. Top with mozzarella pearls and cover 3-4 minutes.
