Well it came and went… My little guy is now 3 years old. That’s a big deal in the toddler world right!?! He will be wanting to now do more on his own. With still the occasional fit if I don’t assist him in eating a snack here and there. I went the store bought route last year with fear of screwing up something at the last minute. Yet still it was a great cake, with the icing on top designed into cookie monster (birthday theme:Sesame Street).

I must admit I kinda did again this year with deciding to make an “Ice Cream cake”, but fuck it! I decided to do a “FUNFETTI ICE CREAM CAKE”! I didn’t even make the cake or the ice cream, I went the box route. I know i’m sorry “fromscratchkitcheners”! “I vow to make my son’s birthday cake next year from scratch”. Well without further ado. Drool photos and instructions below.
Ingredients:
- 1 Box Pillsbury Funfetti Cake
- Vanilla Ice Cream (bought the bucket)
- Cool Whip
- Confetti Sprinkles
You Will need:
- SpingFoam Pan
- Wax Paper or Plastic Wrap
Directions:
- PREPARE cake mix according to package directions using water, oil and eggs to make 1 (8/9-inch) cake. Cool completely. Use serated knife to cut cake into 2 even round layers.
- LINE 8/9-inch round baking pan with plastic wrap. Scoop ice cream into prepared pan. Cover with plastic wrap. Press to form an even layer. Freeze 2 hours or until firm.
- I went off script here and decided to use 1 layer of the cake which became the middle layer and the top and bottom of cake is ice cream.
- Filled bottom of pan with ice cream then added the layer of cake and topped that with another layer of ice cream. Place in freezer to firm up.
- Once cake is firm, ice whole cake with cool whip and top as you wish. Allow to refirm in freezer til serving.
