That’s right peeps, “Black Eye Peas”! I decided after “Meatless Monday” night meal that leftovers would make a great veggie burger and sure enough the following day I turned my southern dinner into a burger.

I quickly whipped these up while Aidan took a nap. I would finally have a meal all to myself!

How I Prepared:
- I had about 2 cups left over of what I’m calling my “black eye pea hash”.
- Puree half in Ninja just a bit still leaving slight texture then mixed together remaining hash with puree.
- Shredded half a potato using box grater add to patty hash mixture.
- Form patties, create a whole in center of patty.
- Pan fry in a couple tbsp. of oil , fry on both sides about 4 minutes per side.
- Caramelized some onions right alongside patties for topping.
